The Week of Thanksgiving 2014

The Holidays are upon us. Halloween, which is my "bookmark" to pre-holiday planning, came and went without much fanfare. Thanksgiving is just days away, I have pulled my recipes, shopped for the turkey and side dishes, done an inventory of serving pieces, and said a prayer that everything goes smoothly.

This week, many of us will cook the largest meal of the year. Cooking is something that I enjoy doing, and each year, I look forward to preparing the Thanksgiving feast. The menu this year is the same as last, as I always have requests for my Sweet Potato Casserole, my Corn Casserole, and my Cheesy Apples. It makes planning for side dishes very easy. I add green beans, mashed potatoes, rolls, and pumpkin pie, and the menu is complete.

 All three of my most requested dishes could actually be served as desserts, since they are Sweet and Southern*, like me (only those who know me well will understand just how tongue-in-cheek that statement is). Because I get so many requests, I will share with you my recipes, so you can try them for yourselves.

*Disclaimer: These dishes in no way represent the healthy lifestyle that many of us lead. For those of you who are not from the South, Sweet and Southern usually means loaded with sugar, lard, and calories, and may be fried. Eat at your own risk.

Julie's Sweet Potato Casserole

  • 3 cups sweet potatoes
  • 1 cup chopped pecans
  • 1 cup sugar 
  • 1 stick butter 
  • 1 cup coconut (optional)


Preheat oven to 350 degrees. Boil cubed sweet potatoes. Mash and add butter, sugar, chopped pecans, and coconut. Top with:
  • one cup flour
  • 1 stick butter
  • 1 cup whole pecans
  • 1 cup brown sugar
Combine and sprinkle over top of casserole. Bake at 350 for 30 minutes.

Juju's Fried Apples

  • 3 cans Luck's fried apples
  • 3/4 pound Velveeta (room temperature)
  • 1 1/2 sticks this
  • 1 1/2 cup sugar
  • 1 1/4 cup self rising flour
Preheat oven to 350. Combine Velveeta, butter, sugar and flour. You may need to use your clean hands to knead. Pour apples into a greased Pyrex dish. Drop Velveeta mixture over top of apples and bake for 25 minutes, or until golden brown.

Julie's Corn Casserole

  • 1 can whole kernel corn
  • 1 can creamed corn
  • 8 ounces sour cream
  • 1 box Jiffy Corn Muffin Mix
  • 1 stick butter (room temperature)
Preheat oven to 350. Combine all ingredients in large bowl. Pour into greased Pyrex dish. Cook for 30 minutes, or until golden brown.
